Makes around 12 to 15 buttery and yummy goodness. Takes 30/35 minutes Ingredients 225g plain flour, 100g unsalted butter, softened, 100g caster sugar, 1 egg yolk, 2 tablespoons milk, ½ teaspoon mixed spice, ½ teaspoon ground cinnamon, A pinch of nutmeg, 50g currants, Zest of half a lemon, A pinch of salt Preheat your oven to 180°C (160°C fan). Cream together the softened butter and sugar until light and fluffy. Beat in the egg yolk, milk and lemon zest. In a separate bowl, mix the flour, spices and salt. Gradually combine the dry ingredients with the butter mixture. Fold in the currants until you have a soft dough. Roll out on a lightly floured surface to approximately 1cm thick. Cut into rounds using a biscuit cutter. Traditionally, a cross was marked into the top of each cake using a knife. Place on a lined baking tray and bake for 15–20 minutes until lightly golden.
